~Our Sustainable Sources~
Real Food Nation is committed to a sustainable business model and to providing our guests with the freshest and purest ingredients available. We change our menu often to use the best of the season and source the cleanest, sustainably raised meat, poultry and seafood possible. We support local farmers and ranchers as much as we can, with quality and taste being the deciding factor in what we use. We use organic flours from New Mexico & Colorado and organic grains and beans whenever possible. All breads are made in house. Our menu is determined by what is in season and what tastes best.
~Produce~
In addition to our own gardens, we source our organic produce from various local farms, including
Romero Farm, Mr. G’s, Monte Vista Organic Farm and other farms from the Santa Fe Farmer’s Market and the Farm to Restaurant project distribution program. We also supplement throughout the year with Veritable Vegetable, an organic produce distributor in San Francisco, CA.
~Dairy~
We use Organic Valley milk, half & half, cream and buttermilk. Organic Valley is a farmer-owned cooperative that allows the farmers to set their own pricing, giving them the best opportunity to maintain a sustainable and profitable business. We use cheese from local producers – South Mountain Goat Dairy in Edgewood, Sweetwood Dairy in Peña Blanca, Tucumcari Mountain Cheese Factory – as well as artisan and farmstead cheese from around the U.S. and Europe.
~Poultry & Eggs~
Our eggs come from Beneficial Farms, a collaborative New Mexico CSA with over 40 participating farms. Our poultry comes from Petaluma Poultry in California, and Pollo Real in Soccoro, NM. Pollo Real raises French Label Rouge chickens and is a certified organic poultry producer.
~Meat~
We use beef from Niman Ranch, California; Soaring Eagle Ranch, Los Ojos, NM; Canyon River Ranch, NM. Our pork is sourced through Heritage Foods, USA, and comes from a variety of small family farms in Iowa, Kansas and Missouri. These farms raise Tamworth, Red Wattle, Berkshire and Duroc heritage pork breeds. We use lamb from Talus Wind Ranch, NM and buffalo from LaMont’s Buffalo here in Santa Fe.
~Fish & Seafood~
Given that we are in the desert, fish will be a small part of our menu. Salmon and halibut come from Foods in Season, a small forager in Washington that purchases direct from Native American fisherman. They source the freshest, sustainably caught fish available. Scallops are day-boat harvested in the waters off Massachusetts and any tuna we serve will be line caught wild Hawaiian Ahi tuna.
~Wine~
We offer organic and biodynamically produced wines from the U.S. and Europe
~Coffee & Tea~
Our coffee is locally roasted by Aroma Coffee, and is always organic.
~Water & Energy~
Real Food Nation gets its water from our own well. We filter all of our water and we also test our water for purity every quarter. We do not serve any bottled still water and we will offer only domestic sparkling water. We harvest all rainwater in our cisterns for use in irrigating our gardens. Our hot water is provided by a solar on-demand water heater.

The mission of the Santa Fe Wine & Chile Fiesta is to create a week of food and wine events that promote Santa Fe as a world-class culinary destination.
